The Mosaic hop was developed by the Hop Breeding Company, a joint venture between Yakima Chief Ranches and hop colossus John I. Haas. It’s the same company that developed Sabra, Eukanot, and Citra. (Not bad!)
The Hop Breeding Company released Mosaic in 2012, devloping it from Simcoe and Nugget-derived hops. What they were shooting for was a strong, dual-purpose hop. What they got is a Swiss Army Knife of a hoptasticness!
Mosaic, sports a cavalcade of flavor notes from tropical fruit to citrus to pine to earthiness. It’s insane, and brewers have enjoyed taking advantage of Mosaic’s variable character in Pale Ale after IPA. (Mosaic is, especially, a Most Valuable Player in New England Style IPAs.)
