100% Grillo (Sicilia DOC)
How It’s Made:
Cantina Ottoventi sits in Erice, a small DOC on the western edge of Sicily, a small mountainous town with a once important medieval tower. Most of the area’s vineyards are located on the upper slopes of Mount Erice. (Ottoventi’s vineyards for this wine’s Grillo grapes sit 450 feet above sea level.) The tradition among Sicilian grape growers who sell to winemakers has been to harvest their grapes at their highest sugar content, because they priced their grapes based on it. However, Ottoventi picks their grapes based on ripeness, favoring a balance between fruit and acidity. They ferment their Grillo in stainless steel, aging their wine in steel as well.
Why We Like It:
That much toted balance is the key to this wine for us. The fruit and the acid make a complete package. Have this wine just a little cool to get the most from its aromatics.

50% Syrah, 15% Zinfandel, 10% Grenache, 8% Barbera, 8% Mourvèdre, 8% Counoise, 1% Nebbiolo (Sierra Foothills AVA)
How It’s Made:
La Clarine Farm in the Sierra Foothills started out farming biodynamically and then went even further, adopting the “do-nothing” practices of Japanese philosopher-farmer Manosoba Fukuoka. They pull from almost all of their vineyards (with their different soil types) to get this wine’s wide variety of grapes. Once in the cellar, they ferment the grapes separately as whole clusters, in open top tanks. La Clarine Farm then ages the blended wine for a year in stainless steel tanks and then for six months in the bottle.
Why We Like It:
This natural red is a light-bodied, tart trip. It has a lovely bracing acidity that helps it leap out of the glass. That acid makes it a great food wine for rich sauces and fatty meats. It could especially work well for Thanksgiving. (Hint. Hint.)

How It’s Made:
Kansas City, MO’s Boulevard Brewing Company takes their longtime Saison, the Tank 7, and adds zingy cranberries for a holiday variant.
Why We Like It:
It’s cranberries on the top and the bottom. You get a rush of cranberries on the nose and a wash of that cranny acid on the finish, but, in the middle, it’s bobbing for crans in a slightly hoppy Saison. It’s a fun little play of malt, sweet fruit, tartness, and hops.
