How It’s Made:
The sustainably maintained vineyards for this white from Italy’s second largest island sit at sea level, in Marmilla. That’s the lower Sulcis region, where the vines dwell in the sea’s salt air. After harvesting the grapes, the winemakers subject them to a cold maceration, followed by 10 days of a low temperature fermentation. They then age the wine for a few months in stainless steel.
Why We Like It:
This white offers a light acidity all around that quickly softens into the Vermentino grape’s tart fruit. Maybe it’s just a suggestion from the name and the label, but there’s something about this fresh white that just says, “island wine!”

100% Tempranillo (Castilla-La Mancha)
How It’s Made:
Bodegas Volver ferments their dry-farmed, organic Tempranillo for this wine with its own native yeasts, in stainless steel tanks, allowing the grapes to go through malolactic fermentation as well. After fermentation, they age the wine in second and third vintage French oak barrels.
Why We Like It:
Spicy tannins and hints of licorice on the nose lead to a lovely bolt of bright berry fruit, balanced with acid, all making for a bracing, light-bodied, sipping Tempranillo from central Spain.

From Cooperstown, NY, Brewery Ommegang takes advantage of shared corporate parentage by making a Quadrupel style ale and blending it with a dash of Liefmans Kriek Brut.

This pairing is inspired! Is it the Kriek adding an extra layer to the Quad? Is it the Quad adding an extra layer to the Kriek? Regardless, what you get from this one-of-a-kind joy is the best of both worlds. Grab a goblet and a blanket for this cold week, because the Three Philosophers is a great fireplace beer.
