How It’s Made:
Working with organic grapes grown in Bordeaux’s Entre-Deux-Mers region, Vignobles Siozard presses their grapes and then allows them a brief stint of maceration before a cold ferment for 10 days in stainless steel vats. They then age their wine (we assume in steel as well) on its lees before bottling.
Why We Like It:
How much fun can an Entre-Deux-Mers white be? (So much fun!) Dry pear-like fruit sits ensconced in an appealing basket of acid. It’s just waiting for a light cheddar to play with.

Comtesse Marion

100% Pinot Noir (Languedoc VdP)
How It’s Made:
Comtesse Marion makes this south of France red from Pinot Noir grown in the pastoral hills near the village of Vias, along the Mediterranean coast. The vines are 30+ years old and planted in volcanic soil. Cometesse Marion ferments the grapes in stainless steel and ages the resutant wine in steel as well.
Why We Like It:
This lovely, easy-to-sip Pinot immediately offers up savory tannins that set the stage for deep berry fruit and then hang around for the finish. You want to have this wine on your shelf as a goto bottle.

How It’s Made:
For this shop favorite, Richmond’s Hardywood Park Craft Brewery makes an abbey quadrupel, using UK Challenger hops and then ages the beer in bourbon barrels.
Why We Like It:
This beer is just a gumbo of goodness. It’s hard for bourbon barrel-aged stouts to not be big (which usually is nothing to complain about), but with this quadrupel, there’s more room for subtlety and nuance. You get layers of flavor — toffee, vanilla, and caramel notes with a tinge of bourbon twang surrounding them. This is a lovely beer to kick back and take your time with.
